I'm a freelance journalist and crafter who dreams of starting my own business-- a hometown Tiki bar. I am a former New Orleans Bourbon Street bartender.

i make a salad for dinner sometimes which is delicious. basicaly it's roast beetroot, feta, rocket leaves and crushed walnuts. danish feta is best but you can use any, and you can add slices of roast pumpkin too if you like. i usually roast the beetroot in slices splashed with balsamic and olive oil.
My parents have been really inspiring in this regard, I think they have reached over 100 pounds already! 21 pounds is awesome, and it has to lead you to be proud of your efforts. I think we are under 2 pounds so far, but we had no insurance against our cukes dying and our carrots dying and our lettuce bolting! Oh well, we are still rocking the tomatoes - albeit the cherry variety, so they are not too heavy. =)
