Turkey stretcher...

We're playing a game at our house: how many meals can we make out of one 13 pound turkey?

We baked one, at some for dinner.
And so far, we have turned it into
-two full-size turkey pot pies
-leftovers for lunch and dinner the next day
-a bag of bits to make into a creamy turkey noodle soup.

Did I miss something? Funny to think you can get so many meals out of one bird. He didn't die in vain!

    If you still have turkey left try Jambalaya, Paella, Pilaf or Spanish Rice. They all use rice or Rice-a-Roni as a base plus poultry, sausage and some bits of fish. While recipes call for shrimp or scallops, you can substitute any fish your family will eat.

    Any of the pasta dishes like Tetrazzini that include chicken easily substitute turkey. Our kids will eat casserole so long as it's covered with crushed potato chips or Ritz crackers.

    I like to make turkey enchiladas with leftover turkey. Also you can throw leftover meat in at the end of a stir-fry. Mix leftover turkey with leftover mashed potatoes and stuffing and a bit of broth for a turkey hash.

    Also, boil the carcass with a sliced leek (most important for good flavor), a chopped yellow onion, 3 large diced carrots, 3 stalks of diced celery plus their leaves, 4 large cloves of garlic, smashed, a head of parsley chopped and salt and pepper. You will have delicious broth for a soup base or for cooking other meals.

    Yep--I love the smell of the roasted turkey soup made with the bones. Yum.
